This Stratus is composed of an Ethiopia Coffee Exchange natural and cherry from 35 small holders contributing to White Stone Mill in central Thailand. Sede Washing Station accepts cherry from neighboring small holders, processed as natural lots. White Stone Mill accepts coffee in both cherry and parchment form. Processing includes a 36-hour anaerobic fermentation and 8-10 days dry on raised beds. More recent focus on East Asian Arabica has brought higher quality lots from Nepal and Myanmar while coffee usually consumed in-country or Japan and China Sea markets is slowly making its way westward. Behind Brazil, Vietnam is the second highest coffee producing country in the world.
